Shallots are a type of small onion that has papery yellow, red, or gold skin and have a sweet crisp taste when eaten raw or cooked. Shallot onions grow similar to garlic in that they are clusters of cloves. Depending on the size of the shallot onion, anywhere between 2 and 6 cloves grow under the skin.
